Les Bergers des Étolies is a Languedos wine which has a perfect harmony for this great red with a skilful blend and beguiling length… These grape varieties are: Grenache, Syrah and Mourvèdre and it is aged in oak barrels. It is on a gravelly terroir. You will taste it between 16 and 18°C. It has a deep purple color. Its nose is powerful and racy with notes of small black fruits, leather, mocha and spices. Its mouth is powerful but round and fine and has a good length. It will find its agreement with a cassoulet, a rabbit with olives or a rougail. Red meats, game and stews in general. To drink on the fruit in its first three years, this wine will reach its full potential after a few years in the cellar. Between 3 and 7 years old. Birdsong sounds like a signal for everyone at the first and last light of day. It is life that awakens and then fades relentlessly. Inspired by a poem by the emblematic Max Rouquette "the birds of dawn" underline the fragility of this song of the Earth always ready to stop like a stone at the bottom of the water.
