The white Cartagena from Château Haut Gléon is a liqueur wine. It is blended with the Marsanne and Grenache Blanc grape varieties. To the fresh grape juice, a liter of grape brandy at 96° is added to block the fermentation. Then it spends the winter on lees in oak barrels, where the clarification takes place by itself. We then decant and leave to age in bottles. Its dress is golden yellow and amber. The nose is intensely honeyed and fresh with dried fruit and wax. It has an unctuous and deep palate with flavors of grapes, figs, peaches and plum kernels. Food and wine pairings: magnificent with foie gras and Roquefort. Also to try on Asian cuisine. Serving temperature: 10°C / 12°C. Cellaring time: 10/15 years.
