Echine d'Ane wine is a local wine. It is vinified with a single grape variety: red Grenache typical of Languedoc which is elegant, fresh and full of finesse... Its color is ruby. The typicality of Languedoc Grenache is revealed through floral notes. The palate, supported by the freshness of our terroirs, is elegant, full of finesse, with grainy tannins. It will be perfect with wild rabbit stew, Causses blue cheese, baked turkey leg or lasagna. This wine will go very well with all your grilled meats and charcuterie in general. A popular proverb which says that "to live in Saint-Guilhem-le Désert, you need a donkey's back, a wolf's tooth and a dog's leg" and which even continues "we are enough to eat what we have and if anyone 'someone wants to come, let him cut his legs on the way'. This adage finds its origin in the poverty and frugality of the regime of the monasteries of yesteryear in these arid regions. It was another way of saying that the visitor was not really welcome because it was expensive, but above all that daily survival was not easy and required special skills. So share it...
