Ayala Brut Nature is a Champagne in its purest form. It is a champagne without dosage at disgorging, this cuvée requires constant attention, necessary to express the essential. With delicacy, she sublimates the raw material, transformed by authentic and singular know-how. Vinification is partly carried out in the new stainless steel vat room, a cutting-edge tool, which allows us to create a wine of remarkable precision and purity. After prolonged aging in the cellar, the Brut Nature cuvée reveals an elegant complexity. It bears the signature of a deliberately prolonged autolysis, to better reveal the exceptional quality of the grapes, from the best vintages of Champagne. Without artifice, the blend combines a majority of Chardonnay, then Pinot Noir. In minor, Pinot Meunier completes the whole with finesse, in a spirit of purity and balance. Brut Nature goes perfectly with all iodized dishes: oysters, raw fish and shellfish, sea urchins, caviar. It also goes wonderfully with Thai cuisine or even sushi, makis and sashimi. The eye is bright golden with silver highlights. The nose is frank and precise, with notes of citrus and salinity. The palate is complex and clean, with purity and tension, chiseled minerality. The blend is composed of Chardonnay 55%, Pinot Noir 30% and Pinot Meunier 15%.
